Here we have it! September 2013 and time again for Vegan MoFo! I am excited to participate for the fourth year in a row. The first three years I had one goal- to post 20 times during the month. I decided it was time to spice things up a bit in honor of my fourth year. I took the thought of spicing it up both literally and figuratively with a theme.
*Drum roll*--Latin Cuisine!
In August, John and I took a much needed vacation to Puerto Rico. During our time there, I was inspired by the cuisine we had. Vegan eating did not seem like a challenge during our vacation and we were impressed by the many delicious and filling vegan and gluten free meals that we enjoyed. I recommend this Island for anyone looking for a Caribbean location that is also vegan friendly.
So my plan for the month is to bring you 20 posts about Latin Cuisine. Some of my posts will be focused on the delicious meals that we consumed while on vacation or in the wonderful City of Durham, while others will be a journey into my own Latin creations or recreations. I will also throw in snipits from our vacation every now and again.
We stayed at three different places while in Puerto Rico. The last stop was in San Juan and it had the most beautiful blueish-green water. Here one of those shots from the hotel. We were on the 10th floor and the view was amazing! I enjoyed waking up to this scene each morning. We spent quite a bit of time in the ocean, but this spot in particular was a bit rough. We enjoyed this beach mostly from our room or from the pool area of the hotel.
I am looking forward to reliving some of our vacation experiences with fellow MoFo readers. I am mostly excited about my attempts at Latin cuisine. My ancestry is mostly Italian and German, so I cannot vouch for authenticity in my attempts. All I can promise are meals that are 100% vegan and gluten free and delicious! I thank you for taking MoFo year number four with me!
